Spelt and mozzarella pancakes

A great dish to get the children to help


Makes 8 –12

Spelt and mozzarella pancakes

for the pancakes

4   eggs  
100 g rye or spelt flour*  
200 ml water  
½ tsp salt mix together into a batter and allow to stand for at least 30 minutes
       
    oil for frying add oil to the frying pan and make small pancakes of no more than 10cm diameter, fry on both sides
      turn on the grill
      cover an oven tray with tin foil and place pancakes on it

for the topping

1   mozzarella finely diced and distributed over the pancakes
    dried Provençal herb mix sprinkle over
      place under grill and allow the mozzarella to melt
    salt & pepper Add to taste
    extra virgin olive oil lightly drizzle over pancakes

Chef’s tip

* you can use any other flour you like.

Rye comes originally from Central Asia and is usually used to bake dark breads. Rye has a high level of the essential amino acid lysine, calcium and fluoride. Its strong characteristics are good for a healthy digestion.
