

A great dish to get the children to help
Makes 8 –12

| 4 | eggs | ||
| 100 | g | rye or spelt flour* | |
| 200 | ml | water | |
| ½ | tsp | salt | mix together into a batter and allow to stand for at least 30 minutes |
| oil for frying | add oil to the frying pan and make small pancakes of no more than 10cm diameter, fry on both sides | ||
| turn on the grill | |||
| cover an oven tray with tin foil and place pancakes on it |
| 1 | mozzarella | finely diced and distributed over the pancakes | |
| dried Provençal herb mix | sprinkle over | ||
| place under grill and allow the mozzarella to melt | |||
| salt & pepper | Add to taste | ||
| extra virgin olive oil | lightly drizzle over pancakes |
* you can use any other flour you like.
Rye comes originally from Central Asia and is usually used to bake dark breads. Rye has a high level of the essential amino acid lysine, calcium and fluoride. Its strong characteristics are good for a healthy digestion.
