

Perfect for lunch boxes, or a healthy snack at the office or on the road.
Makes c. 30 energy balls

| 40 | g | unsalted butter | melt in a pan |
| 200 | g | muesli | |
| 60 | g | chopped mixed nuts | lightly roast together with the muesli, allow to cool |
| 130 | g | dried fruit (e.g. apricots, mango) | finely chopped and add |
| 50 | ml | orange juice | add |
| 3 | tblsp | acacia honey or golden syrup | add and mix well; place in the fridge for 15 minutes |
| desiccated coconut powder | knead the muesli mixture and, with wet hands, form balls and turn them in the coconut powder until they are completely covered |
The energy balls can be kept in the fridge in an air-tight container for up to a week. Enjoy with a glass of milk, a fromage frais or a yogurt!
