Muesli energy balls

Perfect for lunch boxes, or a healthy snack at the office or on the road.

Makes c. 30 energy balls

Muesli energy balls

Preparation

40 g unsalted butter melt in a pan
200 g muesli  
60 g chopped mixed nuts lightly roast together with the muesli, allow to cool
130 g dried fruit (e.g. apricots, mango) finely chopped and add
50 ml orange juice add
3 tblsp acacia honey or golden syrup add and mix well; place in the fridge for 15 minutes
    desiccated coconut powder knead the muesli mixture and, with wet hands, form balls and turn them in the coconut powder until they are completely covered

Chef’s tip

The energy balls can be kept in the fridge in an air-tight container for up to a week. Enjoy with a glass of milk, a fromage frais or a yogurt!
