

Quick and easy to make; goes well with soup.
For a pie plate or a quiche dish with a loose base of c. 26 cm (10”).

| 1 | packet | puff pastry | roll out into a round shape and place on the pie plate; with a fork puncture the pastry in a number of places |
| 1 | tblsp | butter | |
| 1 | small onion | sauté together | |
| 100 | g | ham | cut into strips and sauté with the onions |
| 500 | g | Frozen, chopped spinach | |
| 150 | g | Zwicky soya flakes | add together and keep on low heat until the spinach has defrosted |
| 200 | ml | single cream | in a separate bowl |
| 2 | eggs | beat together with the cream | |
| salt, pepper, nutmeg, thyme | add to egg mixture to taste, mix with spinach mixture and spread over pastry |
Preheat an electric oven to 180˚C/350˚F, fan oven 160˚C/310˚F, gas mark 4
Bake for c. 40 minutes until golden; serve hot
