Barley soup

This is a quick and easy version of this classic family favourite.

Serves 4

Barley soup

Preparation

150 g vegetables (e.g. carrots, leek, celeriac, onions, garlic) chop very finely
60 g pearl barley add

cooked ham or cooking bacon
smoked ham or smoked cooking bacon
cut into very small pieces
1 l stock add to the pan and boil until all ingredients are soft and tender
before serving, taste again and add salt & pepper as preferred      

Chef's tip

Barley is a particularly rich source of vitamins from the B group and minerals.
