

The delicious Salad Goodies add that little bit of extra to your salads and an extra helping of nutrients at the same time
Serves 4

| 50 | g | lollo rosso |
| 50 | g | lambs lettuce |
| 100 | g | curly-leaf lettuce |
| 2 | tblsp | sweet corn |
| 2 | tsp | Salad Goodies |
| 4 | tblsp | rapeseed oil | |
| 4 | tblsp | balsamic vinegar | |
| salt & pepper | mix together and sprinkle over the mixed salad | ||
| 4 | tblsp | cottage cheese | add 1 tablespoon on to each plate |
You can use any oil you like for the dressing, e.g. extra virgin olive oil or safflower oil.
The exact combination of lettuce can be changed depending on seasonal availability. All lettuces are richer in flavour when eaten in their main growing season. They also have travelled less far than imported lettuce.
Cold-pressed rapeseed oil is rich in mono and polyunsaturated fatty acids and has a particularly high level of linolenic acid. One tablespoon of rapeseed oil provides a third of our recommended daily requirement of vitamin E.
Salad Goodies are available in a number of varieties: Mexican style, red pepper croutons, roasted sesame seeds and hazel nuts, mixed seeds or salted pumpkin seeds.
Sesame seeds are particularly high in nutrients.
Sunflower seeds are rich in essential amino acids, fluoride, iron, copper, magnesium, vitamins of the B complex as well as vitamins A and E. Pumpkin seeds are rich in iron, phosphorus and zinc. Hazel nuts are rich in protein and are a rich source of polyunsaturated fatty acids, carbohydrates, phosphorus, potassium, calcium, magnesium, iron and vitamin C.
